一、稻壳的理化特性
1、 Physical and chemical properties of rice husk
稻壳是由外颖、内颖,护颖和小穗轴等几部分组成,外颖顶部之外长有鬓毛状的毛。正稻壳则是由一些粗燥的厚壁细胞组成,其厚度大约24~30微米,稻壳富含纤维素、木质素、二氧化硅,其中脂肪、蛋白质的含量较低,基于稻谷品种、地区、气候等差异,其化学组成会有差异。

1、稀释淀粉含量,冲淡淀粉。

粮食中淀粉含量在65%左右,发酵入池淀粉控制在17~22%之间。加入稻壳起到冲淡淀粉作用。

这样发酵的粮醅含有一定量空气,白酒酒曲在有氧的情况下大量繁殖,无氧发酵,借助稻壳使发酵的粮醅含有一点点空气,正好使酵母菌等繁殖起来。

白酒发酵过程在窖池中进行,有了稻壳可以拖着水,使窖池内上下层发酵均匀,不于上层发酵的不好,下层水过多。

入窖加入谷壳,可以疏松酒糟,不致入窖粮糟发粘,还可以降低酸度,利于发酵。用凉茬机蒸馏时加入谷壳,可以使酒糟摊撒均匀,不压气,提高出酒率。

稻壳中含有多缩戊糖,果胶质和硅酸盐等成份,在发酵过程中影响酒质,所以其用量要严格控制(一般控制在8%比较合适),并且使用前进行清蒸,多缩戊糖在微生物的作用下生成t醛。稻壳要求新鲜、干燥、无霉烂。
Rice husk contains pentose, pectin, silicate and other components, which affect the quality of wine during fermentation. Therefore, the dosage of pentose should be strictly controlled (generally controlled at 8% is more appropriate), and it should be steamed before use. Pentose can produce t-aldehyde under the action of microorganisms. Rice husk should be fresh, dry and free from mildew.
